Easter – Simnel – Cake
Hi and welcome to my blog (or welcome back if you’ve visited before).
This time I’ve got a Simnel Cake I made for Easter to show you.
I often buy a fruit cake and decorate myself for special occasions, such as Christmas and Easter, but this year I decided to bake the cake myself. I didn’t actually follow a recipie, just had a quick look online for ideas of what, and what weights, people put into cakes, and then went my own way with spices and ingredients from my cupboard. I was actually quite surprized at how well it turned out.
I did cheat with the decoration and bought a pack of marzipan rather than makeing my own.
I heated some apricot jam and brandy together to brush over the top of the cake to hold the circle of marzipan in place, and also to stick the marzipan balls to the top to represent the appostles and Jesus. I then used a kitchen blow torch to brown the whole thing – not quite as even a colouring as I’d have liked, but not too bad.
Not only did it look good, but it actually tasted very nice as well.
This is what the cake looked like when finished.
